Warm Soba Noodle Bowl with a Soft-Boiled Egg

Ingredients
- 1 cup Soba Noodles
- ½ cup Steamed Broccoli
- ½ cup Sautéed mushrooms
- ½ cup Bok Choy
- ½ cup Green Onion
- 3 Conestoga Farms Free Run Omega 3 Egg White
- 1 tbsp Coconut Aminos
- 2 tsp Sesame Oil
- 1 tsp Honey
- 2 tsp Sriracha
Instructions
- In a bowl combine cooked soba noodles, steamed broccoli, sautéed mushrooms, bok choy, green onion and a soft-boiled egg.
- For the sauce combine 1 tbsp coconut aminos, 2 tsp sesame oil, 1 tsp honey, 2 tsp sriracha
- For the eggs boil water and then add 2 eggs and cook for 6 minutes and 30 seconds.
- Transfer the eggs to an ice bath for 3-5 minutes. This stops the cooking and make the eggs easier to peel.
- In a bowl add the soba noodles and top with steamed broccoli, sautéed mushrooms, bok choy, green onion and soft-boiled eggs.
