
Tortilla Egg Muffins
Let’s Meal Prep! We’re meal prepping Egg Tortilla Muffins with our family pack eggs. Our Omega-3 + Lutein eggs provide extra nutrition with added Omega-3 & Lutein. These Tortilla Egg Muffins are an ideal on-the-go meal. They are perfect for freezing and can be easily reheated.
Ingredients
- 12 Conestoga Eggs
- 12 Mini Tortilla Shells
- 1/2 cup of sun-dried tomatoes
- 1/2 cup of sliced spinach
- 1/2 cup of crumbled feta cheese
- Avocado Oil Spray
Instructions
- Spray each muffin tin with avocado oil and use a brush to distribute oil around each muffin cup.
- Line with a tortilla shell and crack in one egg.
- Top with sun-dried tomatoes, spinach and feta.
- Bake at 400 °F for approximately 18 minutes if you desire an egg yolk to be slightly runny. If not, bake for an additional few minute.
Notes
*You could customize these egg muffins to your liking by adding your toppings of choice. For additional protein, add crumbled sausage or bacon.
