
Egg Wraps
Unleash your Inner Chef this year! It’s Meal Prep Monday so I’m making Eggs Wraps with Conestoga. Their 18-pack carton is perfect for meal prepping. Did you know that eggs are extra healthy because of Lutein which is the reason for their naturally golden yolks from marigold. Plus, eggs are good for your vision. I’m using a variety of ingredients to make different fillings!
Ingredients
- 2 eggs
- 1 Tbsp of warm water
- Avocado Oil spray
- 2 eggs
- 1 Tbsp of warm water
- Avocado Oil spray
Filling Options
- Turkey and Cheese
- Hummus with cucumber ribbon
- Veggies of choice
- Smoked salmon
- Cream cheese and capers
Instructions
- Crack 2 eggs into a bowl and add 1 Tbsp of warm water.
- Beat eggs vigorously, until frothy.
- Spray a non-stick skillet with some avocado oil and place over medium heat. Once oil is bubbly, add beaten eggs and be sure to reduce heat to low.
- With a spatula, gently pull cooked eggs towards the centre.
- Once the eggs appear to be nearly set, flip it over. Turn off the heat.
- Be sure to separate egg wraps with parchment paper to avoid any tearing.
- Add filling of choice and roll it up.
- Enjoy.... from my kitchen to yours!
