Bhurji – Indian Scrambled Eggs

Ingredients
- 4 Conestoga Farms Free Run Omega 3 Eggs beaten
- 2-3 tbsp vegetable oil
- 1/2 large white onion chopped
- 2 Roma tomatoes chopped
- 1 green chilli chopped
- 1/4 teaspoon turmeric
- 1/4 cup cilantro chopped
- salt to taste
Instructions
- In a frying pan over medium heat, add vegetable oil. Add chopped onion and sauté until soft, about 2 minutes. Add green chilli and fry for an additional minute, followed by the chopped tomato. Add salt and turmeric. Sauté for 3-4 minutes.
- Add eggs to the pan and gently scramble the mixture. Just before the eggs set, add chopped cilantro and continue to stir until fully cooked. Serve hot with naan.
