Bhurji – Indian Scrambled Eggs

Lena Almeida takes us to India with her delicious bhurji recipe from Eggs Around the World! A popular street food in India, bhurji features savory aromatics combined with smooth, delicious scrambled eggs.

Ingredients
  

  • 4 Conestoga Farms Free Run Omega 3 Eggs beaten
  • 2-3 tbsp vegetable oil
  • 1/2 large white onion chopped
  • 2 Roma tomatoes chopped
  • 1 green chilli chopped
  • 1/4 teaspoon turmeric
  • 1/4 cup cilantro chopped
  • salt to taste

Instructions
 

  • In a frying pan over medium heat, add vegetable oil. Add chopped onion and sauté until soft, about 2 minutes. Add green chilli and fry for an additional minute, followed by the chopped tomato. Add salt and turmeric. Sauté for 3-4 minutes.
  • Add eggs to the pan and gently scramble the mixture. Just before the eggs set, add chopped cilantro and continue to stir until fully cooked. Serve hot with naan.
