Soba Noodle Bowl with a soft-boiled egg

Ingredients
- 4 Free Run Omega-3 Lutein eggs
- Sobanoodles
- ½ tbsp olive oil
- ½ lb bokchoy
- 1 cup mushrooms sliced
- ½ red pepper thinly sliced
- 4 green onion chopped
Sauce
- Chili oil
- Coconut aminos or soy sauce
- Toasted sesame oil
Instructions
- Add the eggs to a small pot of boiling water for 5-7 minutes Once done immediately transfer to a bowl of ice water. Cool for at least 5 minutes. Peel and slice in half
- In another pot, cook soba noodles according to package directions. Rinse and drain.
- Heat olive oil in a pan on medium heat. Sauté mushrooms and Bok choy with a small pinch of salt or 3- 5 minutes.
- Assemble the ingredients evenly among 2 bowls starting with the soba noodles, followed by the Bok choy, mushrooms, red peppers, sliced eggs, and green onions.
- Drizzle with chili oil, coconut aminos and sesame oil.
