Ingredients
  

  • 4 Free Run Omega-3 Lutein eggs
  • Sobanoodles
  • ½ tbsp olive oil
  • ½ lb bokchoy
  • 1 cup mushrooms sliced
  • ½ red pepper thinly sliced
  • 4 green onion chopped

Sauce

  • Chili oil
  • Coconut aminos or soy sauce
  • Toasted sesame oil

Instructions
 

  • Add the eggs to a small pot of boiling water for 5-7 minutes Once done immediately transfer to a bowl of ice water. Cool for at least 5 minutes. Peel and slice in half
  • In another pot, cook soba noodles according to package directions. Rinse and drain.
  • Heat olive oil in a pan on medium heat. Sauté mushrooms and Bok choy with a small pinch of salt or 3- 5 minutes.
  • Assemble the ingredients evenly among 2 bowls starting with the soba noodles, followed by the Bok choy, mushrooms, red peppers, sliced eggs, and green onions.
  • Drizzle with chili oil, coconut aminos and sesame oil.
