Chopped Egg and Asparagus with Brown Butter

Our friend Jasmine Baker shares an easy, healthy Chopped Egg and Asparagus with Brown Butter dish. It’s a great option to bring to family gatherings for everyone to enjoy. Need to save time? Use Conestoga Farms Hard Boiled & Peeled Eggs instead.

Ingredients
  

  • Bunch of asparagus
  • 1/3 Panko crumbs
  • 4 Conestoga Farms Free Run Omega-3 eggs
  • ¼ Butter
  • Pinch of salt

Instructions
 

  • Blanch a bunch of asparagus in salted water and transfer to a platter
  • Toast about 1/3 of a cup of panko crumbs, set aside
  • Carefully place 4 large eggs into boiling water for 8-9 minutes. Transfer to an ice bath for 5 minutes
  • Peel your eggs, then give them a rough chop and sprinkle on top of the asparagus
  • Brown about 1/4 cup butter and drizzle all over the chopped egg
  • Top with the toasted panko
