In a bowl combine cooked soba noodles, steamed broccoli, sautéed mushrooms, bok choy, green onion and a soft-boiled egg.
For the sauce combine 1 tbsp coconut aminos, 2 tsp sesame oil, 1 tsp honey, 2 tsp sriracha
For the eggs boil water and then add 2 eggs and cook for 6 minutes and 30 seconds.
Transfer the eggs to an ice bath for 3-5 minutes. This stops the cooking and make the eggs easier to peel.
In a bowl add the soba noodles and top with steamed broccoli, sautéed mushrooms, bok choy, green onion and soft-boiled eggs.
