Crack eggs into bowl and whisk until egg yolk and egg whites are combined
Add vanilla extract to egg and whisk combining them together
Add finely chopped chives to egg and vanilla mixture and whisk together
Dredge the brioche bread slices into egg mixture on both sides. Do this to all 4 slices and put to the side
In a large sauté pan, add butter and keep heat to no more than medium
Once butter is warmed and melted, add slices of soaked bread into pan
Cook on both sides for about 90 seconds or until golden brown on both sides. Cook all 4 slices and put to the side
In a large bowl, line up French toast so it stands up against lining of the bowl
Add large dollop of cream cheese in front of the French toast
Drop smoked salmon on either side of the cream cheese
Add capers next to one side of the smoked salmon
Add dill leaves rustically onto cream cheese and smoked salmon
Finish with freshly grated lemon zest
