
Lentils with Poached Egg
Courtesy of Ursula TruchanEasy and very nutritious meal. Lentils, which are very popular in Poland, with poached egg are perfect for breakfast, lunch and even dinner
Ingredients
- 2 Conestoga Farms eggs
- 1 onion
- 1 tbsp olive oil
- 1 cup split red lentils
- 1 1/2 cups vegetable broth
- 1 cup marinara
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chives
Instructions
- In a medium sauce pan, heat the olive oil and add the diced onion. Sauce over medium heat for about 5 mins.
- Add the dry lentils, vegetable broth, marinara, salt, and pepper and stir. Cover with a lid and reduce heat to low. Crack the two eggs on top. Cover the pot and let it cook for about 10 mins., or until lentils are cooked to your liking.
- Serve with diced chives on top
